推廣校園健康飲食教育 宣揚吃在地吃出健康

[2015年5月15日‧香港] 由英國名廚 Jamie Oliver 策動,每年5月舉行的 Food Revolution (港譯:為食起革命) 今年踏入第四屆。香港區與全球超過120 個國家,分別舉辦不同主題的飲食活動,去引起公眾發掘食物的知識及學習烹調、討論食物浪費的方案等。今年5月15日為全球為食起革命日 (Food Revolution Day),為食起革命全球超級大使陳嘉惠Beatrice 聯同150位中一生及義工,在聖若瑟英文書院,一同製作由 Jamie Oliver 親自設計的「為食起革命」主題菜式 — 爽脆包包 (Squash it Sandwich),讓同學一嘗烹飪的樂趣,並希望將今年活動主題 — 「我要飲食教育」帶入校園。是次活動使用的本地新鮮有機蔬菜全由本地有機農夫送贈。

為食起革命超級大使(香港區活動發起人)陳嘉惠表示,為配合今年主題,全球千多位大使除於5月15日為食起革命日進行各種與飲食相關活動外,亦同步配合Jamie Oliver的全球百萬聯署行動,望為學童爭取健康飲食教育列入學校必修科,至今已錄得超過80萬個簽名,更得到不少中外名人支持響影。她說﹕「其實我們於2014至2015年共向近2 萬名香港中、小學童提供免費的健康飲食教育活動課程,反應熱烈。 我們深信教育令更多人認識食物及烹飪,從以掌握自己及家人的健康。煮食其實比想像中簡單,就如爽脆包包,只需花20分鐘,便完成洗、切、刨、揼、撈五個步驟,但當中的營養價值就比預製速食的快餐漢堡或叮叮飯盒高得多。」

每年活動遍佈5   感謝義工及團體支持及贊助

是日活動得以順利舉行,全賴多個單位支持,包括瑞信香港(Credit Suisse) 派出義工隊及捐款贊助活動物資、Boxful 寶易存贊助活動物資儲存及運送服務,還有多個贊助食材的愛心單位如Health Concept 健康概念、點點綠、OrganNet Market 及多家本地有機農場等。Beatrice表示﹕「我們沒有大機構的人力、物力,故每年活動我們都需要很多義工、團體的協忙,他們很多收到邀請時都二話不說便答應支持,足証大家都認同這個活動的意義。看到愈來愈多人認識及重視健康飲食,就是我們努力的動力與最大回報。」參加的義工代表表示﹕「其實工作看起來簡單,但與學生合作很有意義,加上一群人一起煮食的氣氛及樂趣,希望未來可參加更多如親子煮食活動。」

為食起革命5月分別在香港舉行 6 場免費公眾健康飲食活動、5 場學童活動、並與合作伙伴舉辦超過 20 場飲食、烹飪工作坊及由支持商戶提供購物優惠等,並於網站提供超過 300 個免費食譜。詳情請參閱﹕www. frd.asia

Food Revolution, a Global Topic

Food is always an important topic for everyone, especially in terms of finding solutions to different problems that constantly emerge. With the opening of Expo Milano last week, forums will be held to discuss food crisis, hunger & obesity, and food sustainability among all the participating countries. According to a report from the United Nations, 1.3 billion tonnes of food is lost or wasted every year around the world, at least 2.8 million people die each year as a result of being overweight or obese, and 870 million people were still hungry in 2010-2012. We need changes!

In Hong Kong, the local Food Revolution team will be hosting various food-related activities in May to encourage and raise public interest to learn more about food, practice basic cooking techniques and discuss the issue of food waste.

“FRD x Food Hackathon + Experience” takes its inspiration from Expo Milano. Experts from a broad range of sectors such as agriculture, cooking, food education, and food waste are invited to lead discussions on various food issues through food jamming and sharing. Other activities include green markets and free cooking workshops, offering a chance for the public to learn more about our food system.

On the Food Revolution Day (15 May), the team will be visiting a local school, making Jamie Oliver’s “Squash It Sandwich” with 150 school kids, letting them experience the fun of cooking!

爽脆包包 SQUASH IT SANDWICH

這是色彩鮮豔、美味又好玩的親子食譜,你可以隨意轉用其他的麵包配搭亦可以作沙律食用。This is colourful, seriously tasty and fun to make. Swap the roll for another type of bread, if you like, or leave it out altogether and eat it as a salad.

你需要以下用具 YOU WILL NEED
麵包刀、切菜板、小刀、大碗、茶匙、布、麵粉棒、湯匙、剪刀
Bread knife, Chopping board, Regular eating knife, Large bowl, Teaspoon, Clean tea towel, Rolling pin, Tablespoon, Scissors

材料 Ingredients

4  seeded wholegrain rolls 全麥種子麵包
4  radishes 櫻桃蘿蔔
5cm  piece of cucumber 青瓜
1⁄2 a small carrot 細甘筍
1⁄2 a small apple (core removed) 細蘋果 (去心)
1 tablespoon balsamic vinegar 義大利香醋
1 tablespoon extra virgin olive oil  特級初榨橄欖油
4 sprigs of fresh soft herbs, such as dill, flat-leaf parsley or basil or 2 sprigs of fresh mint 新鮮的香草,如蒔蘿、義大利扁葉香芹或羅勒或兩小枝薄荷
1⁄2 a punnet or 1 handful of salad cress or sprouting herbs 水芹或發芽中的芽苗菜
1 handful of fresh podded peas 新鮮的豆
1 tablespoon sunflower seeds  葵花籽
2 tablespoons quality cottage cheese or cream cheese 茅屋芝士或忌廉芝士
2 tablespoons quality houmous 鷹嘴豆

方法 METHOD

1.On a chopping board, carefully halve the rolls across the middle using a bread knife, to give you a top and a base for each sandwich. Put to one side.
在粘板上用麵包刀將種子全麥卷一分為二,作為三文治的底和面, 再放在一邊備用。

2.Using an eating knife, cut each radish in half lengthways, then slice each radish half into 3 pieces and place into a large bowl.
用小刀將櫻桃蘿蔔切開一半,再將各半瓣櫻桃蘿蔔切成三片,然後放進大碗備用。

3. Cut the cucumber in half lengthways, scoop out the watery seeds** with a teaspoon and discard.
將青瓜切開一半,再以匙羹取走種子**棄之。

** When you drink tap water, you can add the watery seeds into the your glass to add some freshness 青瓜籽可放入常溫清水中,增加清新味道

4. Slice each cucumber half into 4 pieces, then add to the bowl.
將已切開的青瓜每半再切成四份,再加進大碗內。

5. Trim the carrot, then cut into 8 even-sized pieces and add to the bowl.
甘筍切成八等份的小塊,然後加進大碗內。

6. Click apart the cauliflower florets and place into the bowl with the stalks.
把椰菜花弄細放進碗內。

7. Pull out the pepper’s stalk, tearing out the core, then discard.
取走紅甜椒的莖撕去中間的果心。

8. Scoop out the seeds and white pith with a teaspoon, then discard.
用茶匙刮走紅甜椒的種子及白色海綿層部份。

9. Cut the pepper into 4 slices, then cut each slice into 4 pieces. Add the pieces to the bowl.
把紅甜椒切成四片,再把每片切成四塊,再加進大碗內。

10. Place the apple half, flat-side down, on the board.
把半個蘋果平放在粘板上。

11. Cut the apple into 6 even-sized pieces, then add to the bowl
把蘋果切成六塊均等小塊,再加進碗內備用。

12. Place a clean tea towel onto the chopping board and place the vegetables and chopped apple in a pile in the middle.
把一塊乾淨毛巾放在粘板上,再把蔬菜及蘋果放在中心。

13. Fold over each corner of the tea towel so your ingredients are wrapped up like a parcel – make sure there are no gaps to stop the vegetables from escaping.
用毛巾像包裹般包好食材,小心不要讓蔬菜走失!

14. Carefully crush and squash the vegetables with a rolling pin until broken down into little pieces.
小心輕力地用麵粉棒壓細蔬菜。

15. Open up the parcel – if your pieces are still too big, wrap it back up and crush and squash again.
打開包裹,若發現食材的大小過大,就把包裹包好, 再壓碎食材。

16. Measure the balsamic vinegar and extra virgin olive oil into the empty bowl to make your dressing.
在空碗內加入香醋和特級初榨橄欖油開始製作調味。

17. Pick the herb leaves, discarding the stalks.
切走香草的莖。

18. Tear the leaves into small pieces, adding them to the bowl as you go.
把香草的葉撕成小塊,再隨意加進碗內。

19. Using scissors, snip the cress or sprouting herbs into the bowl.
用鉸剪把水芹或或發芽中的芽苗菜剪細並加入碗內。

20. Add the peas and sunflower seeds to the bowl.
將碗豆和葵花籽加進碗內。

21. Add the squashed vegetables to the bowl, then using the tips of your fingers, carefully toss them in the dressing so they’re nicely coated.
把壓碎的蔬菜加進已加調味料的碗內,再把蔬菜攪勻。

22. Spread the base of each roll with the cottage or cream cheese.
在麵包的其中一面塗上茅屋芝士或忌廉芝士。

23. Spread the soft side of each top with the houmous.
在麵包面的另一面塗上鷹嘴豆泥。

24. Equally divide the vegetable mixture between the base of each roll.
把蔬菜平均地放在麵包塗上芝士的一面。

25. Place the lids on top, houmous-side down, press lightly, then tuck in!
將塗有鷹嘴豆泥的麵包底蓋上,把麵包面向下輕按,即可享用!
