全球化對政治、經濟、文化、社會都帶來不同程度的影響,至於個人方面,最明顯莫過於飲食習慣的改變。以往不同文化、地域的人依賴本土的農作物,因此大家的主食、糧食各有文化性。時至今日,大部份的國家都被西方飲食文化影響,全球的食糧愈來愈接近。棕櫚油、大豆、玉米等都成為了更多國家的重要食糧,其中一個主因是棕櫚油、大豆、玉米都是加工食物的主要生產材料! 而加工食物在全球一體化的進程下已滲透全球每一角落。

You’ve probably heard that the food people eat worldwide is getting more and more homogeneous. As the Western diet spreads, we are relying on just a few staple grains and meats. This is a commonly held belief — yet it’s never been authoritatively studied.

Now it has. The results were just published in the Proceedings of the National Academy of Sciences (one of the more prestigious journals) — and it turns out that this commonly held belief is … totally right, and actually more dramatic than some expected.

Living in a city allows us to rely heavily on fast food and processed food. In Hong Kong, children grow up in the culture of fast food restaurants, supermarkets and convenience stores, just like many other places in the world. Every day after the school bell rings, you will see all the happy faces running to the nearby fast food place to get their deep-fried chicken wings, sausages and fish Siu Mai (which is supposed to be steamed fish dumpling, but the ingredients contain no fish, only chemical additives and preservatives). They choose what they eat by convenience and savour, strong savour.

城市人常依賴快餐及加工食物。香港的孩子也不例外,伴隨他們成長的是快餐店、超級市場及便利店。

Think.Cook.Save. Health & Food Education

I truly believe a healthy body is the prerequisite for children to graduate from schools and to achieve their dreams. The food education program I designed and launched in Hong Kong named “Think.Cook.Save. Health & Food Education” is aimed to provide free and quality basic food education to our primary and secondary students.

The program includes an interactive presentation and cooking demonstration with lots of student participation so that the students can acquire basic cooking techniques. The program will enable them to tell the difference between processed food and real food, as well as how to choose healthy food for themselves. In addition, students will also learn the “FOOD” concept, designing balanced meals with five grains, organic fruits & vegetable, omega‐3 & protein and water.

健康的身體是兒童長大後追尋夢想的最重要元素。我.惜.食.健康飲食教育計劃的出現是希望為中、小學兒童提供免費及優質的飲食教育。通過活動、遊戲及烹飪示範,學童認識到健康食物及加工食物的分別,掌握到選擇食物的基本知識及基本煮食技巧。當中的食物概念更讓他們輕易地挑選每餐的均衡飲食食物組合。

Our target: 70 schools & a book

For the first year, our team will work with 70 schools and will publish a Health and Food Education Kit. Through the Education Kit, we hope parents, teachers or any interested volunteers can provide quality health & food education to children, or even adults, around them. Knowing our food is the first step to improve our quality of life.

Thanks to our partners, Chef Alvina Chan and Towngas Cooking Centre, the program so far runs quite well. Also, I need to thank Etpress for publishing the education kit for us and Skypost as our media partner for helping spread the words.

An action of a 5 year-old boy

I have included my friend and her family to one of our previous programs, which is a fun cooking day with underprivileged families, and the other day she told me: “I am so grateful you have invited us to join the program. My boy asked for water today instead of soda, and he went to his room to count the coins he saved in his piggy bank. He told me he wants to give half of his savings to the people in need.” This is the reason and motive for me to keep going!

She writes about food and travel and joined the ambassador program in 2002. 獲得2010年TED大獎的Jamie Oliver,則更進一步告訴我們解決的方法。他是一位英國廚師與烹飪推廣家,以原味主廚(The Naked Chef)之名廣為人知,他因擅長使用有機食材,以及幫助改變英國學校的飲食習慣而為人熟悉。

Jamie Oliver被稱作是廚師界的「貝克漢」,他的有名不完全是因為大家知道他會做菜,或是在電視上常看他做菜,而是他除了做菜,對於吃這個議題他總有獨到的眼光。他曾在倫敦開了一間叫做「fifteen」的餐廳找了十五個不會做菜的街頭年輕人,教他們做菜,如今這家餐廳已成為倫敦的頭牌餐廳了,沒訂位別想吃,取消訂位還得交錢作為Cheeky Chops的基金!

而他最轟動的事,就是挑戰英國學童的「垃圾午餐」,經過深入的查訪,他發現英國學童營養午餐只能用「垃圾」二字形容。他上書到唐寧街十號 ─ 英國首相官邸 ─ 為「眾生」請命。並發起了「反垃圾食品運動」,一時之間社會輿論沸沸揚揚,同時又遇上大選年,這件事成了政黨政治攻防的話題,逼得政府採取改善的行動,在學生午餐的經費與菜色上都作了很大的提升。自此他的形象再度更迭,更高一層到了「關心國家人民」的崇高地步,英國的教師聯盟甚至呼籲封他為爵士。

Jamie Oliver has been drawn to the kitchen since he was a child working in his father’s pub-restaurant. He showed not only a precocious culinary talent but also a passion for creating (and talking about) fresh, honest, delicious food. In the past decade, the shaggy-haired “Naked Chef” of late-’90s BBC2 has built a worldwide media conglomerate of TV shows, books, cookware and magazines, all based on a formula of simple, unpretentious food that invites everyone to get busy in the kitchen. And as much as his cooking is generous, so is his business model — his Fifteen Foundation, for instance, trains young chefs from challenged backgrounds to run four of his restaurants.

Now, Oliver is using his fame and charm to bring attention to the changes that Brits and Americans need to make in their lifestyles and diet. Campaigns such as Jamie’s School Dinner, Ministry of Food and Food Revolution USA combine Oliver’s culinary tools, cookbooks and television, with serious activism and community organizing — to create change on both the individual and governmental level.

這場TED演講,則是他分享了他在西維吉尼亞州(美國肥胖人口最多的一個州)亨丁頓市進行對抗肥胖計畫時,所遭遇的動人故事。

開宗明義,Jamie Oliver這麼說,未來,你孩子的壽命,將會比你的壽命還短,會短上十年,而這是由於我們提供給他們的各式食物所造成的。

Jamie Oliver started his talk with this, “Sadly, in the next 18 minutes when I do our chat, four Americans that are alive will be dead from the food that they eat.”

他點出幾個問題:

一、現在的食物,它們被高度加工,並含有大量食品添加物,多餘的調味;他舉例,就連牛奶都是如此,因為,食品業者發現, 如果你加入大量的香料、色素和糖份到牛奶裡面,會有更多的孩子願意去喝牛奶。

二、蔬菜含量遠遠不夠,竟然連薯條都被認為是蔬菜的一種,尤其,學校裡竟然不能允許使用刀叉(指美國與英國),這根本是在助長速食的廣泛。

三、最可怕的是,食物標示根本是個大問題, 食物的成份標示竟然由食品業者自行主動申護,要想他們能靠自我把關,根本就是球員兼裁判。

He pointed out few issues:

  1. The food we are purchasing now, most of them are being heavily processed, with lots of addictive, favors. For example, even for the milk. The manufacturer put loads of flavorings and colorings and sugar in milk, right, more kids will drink it.
  2. There’s not enough veggies at all. French fries are considered a vegetable. Knives and forks? No, they’re too dangerous. It is to encourage the fast food diet.
  3. Labeling is a massive problem. They want to be self — they want to self-police themselves. The industry wants to self-police themselves.

因此,Jamie Oliver鼓吹自己作菜(他畢竟是個廚師),他認為作法應該是如此:

在每一個主要超市內安排一個食物大使。由他們從採買當季食物教導起,並教我們如何烹調快速、好吃的食物, 給那些忙碌的人們。

Jamie Oliver encourage everyone to cook for themselves and their families and he thinks something should be done:

They owe us, to put a food ambassador in every major supermarket. They need to help us shop. They need to show us how to cook quick, tasty, seasonal meals for people that are busy. This is not expensive.

接著,應該要從小做起,要使每一個孩童在離開學校前,知道如何烹煮十道菜,這件事非常地重要, 這將會拯救他們的生命;這同時也是一種生活技巧。

Under the circumstances, it’s profoundly important that every single American child leaves school knowing how to cook 10 recipes that will save their life. Life skills.

此外,大家應該要不藏私,烹飪技術必須要將其當作是一種生活哲學般的傳遞下去。如果一個人教導三個人如何做某樣菜,然後他們又再教導三個他們的夥伴,大家只需要重複這樣做 25 次, 這就是全美國的人口數了。

But the home needs to start passing on cooking again, for sure. For sure, pass it on as a philosophy. And for me it’s quite romantic, but it’s about if one person teaches three people how to cook something, and they teach three of their mates, that only has to repeat itself 25 times, and that’s the whole population of America.
