全球飲食倡議Jamie Oliver 為食起革命 即將在港舉行
免費烹飪示範、分享會 鼓勵港人識食更惜食

為響應 英國名廚及飲食改革家 Jamie Oliver (2010 TED 大獎勝出者) 的號召,本港將與全球超過 62個國家的代表分別在世界各地舉辦超過一千個飲食關注活動。

由 5月起,本港多家餐廳將推出 為食起革命 菜式,多個烹飪示範、分享會及工作坊等亦將在不同地點舉行。簡介如下,欲知詳情請參閱:https://frd.asia/

1. 為食起革命 @ 理工大學 食物與餐飲 學院 (5月11日,星期六,內容:烹飪班)
2. 為食起革命 @ 港島東農墟 (5月5及12日,連續兩個星期日,內容:4 個分享會、3 個工作坊、2 個烹飪示範,包括由名廚余健志 (Jacky Yu) 及 陳彥琳 (Alvina Chan) 親自示範的烹飪活動)
3. 為食起革命 @ 長洲太平清醮 2013飄色巡遊 (5月17日,佛誕假期,內容:本港首次由外籍小朋友參與飄色,迷你版大廚Jamie Oliver及可愛小農夫將向在場三萬人傳遞 健康飲食 及 惜食香港 的訊息)
4. 為食起革命 @ 本港多家餐廳 (整個5月份,內容:期間限定 為食起革命 時令創意菜式)
5. 其他活動

是次活動是希望引發社會關注一連串飲食議題,包括健康飲食、珍惜食物等。我們認為吃本地食材、支持本土農業,長遠來說是保障港人食物安全,顧及環保及減低醫療負擔必需有的態度及政策。長期依賴內地輸入糧食只會持續引起糧食不安全,長期依賴加工食物亦只會增加更多癡肥症、糖尿病、心血管疾病等肥胖相關的疾病,危害香港人特別是下一代的健康。

為食起革命 香港 發起人 陳嘉惠表示:「內地有毒黑心食材如地溝油、農藥超標的水果及蔬菜及幾乎每天傳來的河水、農田、空氣污染、死豬死雞等新聞,已經令香港人接近無法忍受。本地農墟的興起及成功便見證了香港人對健康、無毒食物的需求及對輸入食物的憂慮。在保障環境的層面上,我們更應該思考如何善用本港土地去自給自足,減少長途運輸的碳排放並真正打造香港成為惜食香港,減少食物浪費及善用廚餘去協助本地城市、天台耕種。」

「我認為教育下一代健康飲食習慣和健康烹飪技巧是非常重要的,因這些知識建構了他們未來健康生活的基礎。」電視飲食節目主持及 “愛煮” 創辦人琳琳(Alvina)。

這是我第二年支持Jamie Oliver基金會的《為食起革命》運動。《為食起革命》在全球選出了多位義工代表去承諾推廣健康飲食及「真食物」(非加工食物),我很榮幸成為其中一份子。
2013年我希望把食物教育帶到社區及學校,繼續推廣本地及城市農耕的可持續性發展及發起一些珍惜食物、減少浪費的行動,當中包括支援食物銀行及減費活動,務求令香港甚至亞洲區的《為食起革命》更強大。

有關《為食起革命》
《為食起革命》是全球參與的飲食改革運動。活動主要是聯繫世界各地喜歡食物的有心人,讓大家去分享資訊、才能及資源,並傳遞各人的知識及去強調世界上各項重要的飲食議題。全球攜手便能喚起改變。《為食起革命》是關於聯繫你的社群,包括學校、餐廳及商業組織。《為食起革命》希望激起大家改變不良的飲食習慣及宣揚每個人都應該獲得更好的飲食教育。

有關Jamie Oliver與《為食起革命》
Jamie Oliver是《為食起革命》的發起人及發動全球過百萬人士參加《為食起革命》的靈魂人物。約在2010年,Jamie Oliver於ABC 電視台推出了一個新節目,名為 “為食起革命”(Food Revolution),Jamie Oliver以電視節目形式去改善學校膳食並在美國西維吉尼亞州的Huntington組織起社區廚房,以行動去教育當地人從基本步驟開始去烹調。縱然最初面對很多困難,但最後反應仍是很熱烈,之後更在洛杉磯展開第二季的節目,並在當地追蹤學校膳食及當地人的飲食習慣。後來Jamie Oliver 成立了非營利的Jamie Oliver飲食基金會,並於美國各地繼續激勵當地人為真食物站起來! 時至今日,為食起革命已演變成一個全球運動,通過全球的義工網絡散播至全球各地的社區,以推廣飲食教育及從基本入手烹調新鮮食物,以對抗愈益嚴重的癡肥問題及飲食相關的各類疾病。

Jamie Oliver’s Food Revolution to be kick-off in Hong Kong this May
Free cooking demo, sharing session to encourage making a right food choice and treasuring food resource

In response to the appeal from world-renowned chef and food educator Mr. Jamie Oliver (TED prize winner 2010), Hong Kong will join force with more than 62 countries to organize over 1,000 food concerned activities across the globe.

Food Revolution HK’s restaurant partners will offer special food menus in May in support of Food Revolution. Cooking demonstrations, sharing sessions and workshops will also be organized at different venues. Please find below the summary of the activities. 1. Food Revolution @ the Food and Wine Academy, PolyU (11 May, Saturday, Cooking Class)
2. Food Revolution @ the Island East Markets (5 & 12 May, 2 Consecutive Sunday, 4 sharing, 3 workshops, 2 cooking demonstrations)
3. Food Revolution @ Cheung Chau’s Piu Sik Float Parade (17 May, Friday, Public Holiday, First time to have a non-Chinese kid to play a role at the traditional Piu Sik Float Parade. A mini “Jamie Oliver” & a cute little farmer will meet over 30,000 participants to help spread the message of healthy diet and no food wastage)
4. Food Revolution @ Local Restaurants (in May, partner restaurants to launch their seasonal creative Food Revolution menu)
5. Other activities

Food Revolution aims to arouse discussion on various food topics, including healthy diet and treasuring the food resources. We believe in the long run, to support local farming and consuming local food will not only protect local food security but also to be more environmental friendly and help reduce the medical liability. Food insecurity will affect us forever if we rely on the imported food from mainland China. Our health, especially the health of our next generation, will be endangered if we keep relying on processed food.

Beatrice Chan, voluntary ambassador of the Food Revolution HK said, “Hong Kong people have suffered enough for the mainland imported toxic food. From swill oil, pesticides’ fruit and veggies to the news about the pollution of river, soil even the air. We want a change. The success of the local farmer markets has proved that Hong Kong people are concerned about their health and there is a huge demand on toxic-free food and the worry on imported food is obvious. At the environment level, we should also think about how to utilize our land resource to make Hong Kong a self-sustainable place and gradually reduce more carbon emission from food transportation. We also have to help build Hong Kong as a truly no food waste city by utilizing our food waste and food resources as well as to support the city and rooftop farming with the food waste’s fertilizer.”

MUM: 媽媽包餃子 MUM: Mum’s style dumplings

材料 INGREDIENTS
蓮藕(切碎) 500g
Lotus Root 500g (chopped)
馬蹄(切碎) 300g Water Chestnut 300g (chopped)
冬菇腳(切碎) 250g Shitake Mushroom Stem 250g (chopped)
甘荀(切碎) 300g Carrot 300g (chopped)
木耳(切碎) 250g Black fungus 250g (chopped)
白菜仔(切碎) 400g Petit Pak Choy 400g (chopped)
陳皮(切碎) 1tsp Mandarin peel 1tsp (dried & chopped)
薑蓉(切碎) 4tsp Ginger 4 tsp (peeled & minced)
芋頭(蒸熟打蓉) 500g Taro 500g (steamed and mashed)
上海餃子皮 1.5斤 Round Dumpling Skin (shanghai Style) 1.5 catty
調味料 Seasoning
鹽 適量 Salt pinch to taste
胡椒粉 適量 White pepper pinch to taste
麻油 適量 Sesame oil a few dash
糖 2tsp Sugar 2 tsp

做法METHOD

1. 芋頭去皮切大塊,蒸15分鐘至軟身;趁熱壓成蓉,待涼。
Chop the taro in a big chunk and steam for 15 minutes until soft & smash, set aside.

2. 用熟油爆香薑蓉 ,再放切碎的材料入鑊鈔熟。
Chop the rest of vegetables. Fry the ginger and add the chopped vegetable by adding white cooking wine.

3. 芋蓉和已熟材料拌勻,加入調味料調味,再灒白酒炒熟,成為「餃子饀」。
Finish filling with taro mash and season with salt, white pepper, sugar and sesame oil.

4. 取1.5湯匙饀料放入餃子皮,在皮邊沾水,對摺餃皮成半月狀便可。然後放入冰箱冷藏12小時。
For the wrapping dumpling, get one piece of round dumpling skin, brush water at the edge. Fill up 1.5 tablespoon filling onto the skin, fold it up side by side and use your fingertips start needle up the edges from the edges to the another edges  be a ‘half moon’ shape and keep in the refrigerator for 12 hours .

5. 中火加熱易潔鑊,放少許橄欖油,再放餃子;當底部開始焦脆,灑點水立即加蓋收慢火,蒸煮約5分鐘便成。
Start cooking, get the pans hot with corn oil, cook it until the skin crispy, and splash a few drops of water cover it up with the lid and steam it for 5 minutes. Enjoy the Mum’s Veggie Dumpling!
