火龍果西米露 Dragon Fruit Coconut Sago

材料 Ingredients 
2個火龍果 2 dragon fruits (purple inside)
200ml椰汁 200ml coconut milk
180g西米 180g of sago
1杯水(8oz) 1 cup of water (8 oz)
60g砂糖 120g of white sugar

做法  METHOD

1. 將火龍果切開細份備用
Cut the dragon fruits into small pieces. Set aside.

2. 準備一中鍋,加水煮沸。將西米放入煮約5分鐘,熄火後關蓋焗約5分鐘。將西米瀝乾及過冷河。(西米處理之後有白點屬正常)
In a medium pot, bring some water to a boil. Add the sago and cook for 5 minutes. Remove from heat, let the sago sit for another 5 minutes. Drain and run under cold water to stop the cooking process. At this stage, the sago should be translucent on the outside and still white on the inside.

3. 準備另一個鍋,加入8oz水煮沸,加入砂糖拌勻之後放入西米,再加入椰汁跟火龍果,細火煮約5-6分鐘之後熄火。
In another pot, bring the cup (8 oz) of water to a boil. Add the sugar and stir. Add back the cooked sago and simmer on low heat. Fold in coconut milk and dragon fruits. Turn off heat after 5-6 minutes. Make sure not to overcook otherwise the sago will be too soft.

4. 放於室溫冷卻,之後可再加上適量椰奶作裝飾。
Store in the fridge or at room temperature. Top with some coconut milk (optional) to serve.
