蘋果金寶批 Grandma’s Apple Crumble by Chef James Oakley

Ingredients ( Serving 1) 材料(1位用)
  • 1pc green apple                                 青蘋果 1個
  • 42g butter                                          牛油 42克
  • 25g oats                                             燕麥 25克
  • 50g flour                                            麵粉 50克
  • 27g soft brown sugar                        黃糖 27克
  • 25g blackberries/ blueberries          黑或藍莓(或其他合時莓果) 25克
  • Salt                                                     鹽 少許

Equipment 工具

  • 1  Non-stick frying pan       易潔鑊
  • 1  Weighing scales              電子磅
  • 1  Large bowl for mixing     大碗
  • 1  Vegetable peeler             削皮器
  • 1  Vegetable cutting knife 刀
  • 1  Chopping board              砧板
Method:   
1. Sugar (10g), butter (20g), oat and flour mixed by finger, rub it in powder.
將黃糖 (10克) 、牛油 (20克) 、燕麥及麵粉倒進大碗,以手指揉搓至融合狀態。
2. Apple cut in four, peel out seeds, then cut in half
青蘋果去皮,切成4份,取走蘋果籽後,再切開共8 片。
3. Pan on high heat , should be very hot .
將鑊以猛火加熱至高溫狀態。
4. Put in apple and get the golden colour, add butter.
將蘋果放進高溫的鑊中,當煮至金黃色,再加入牛油 (22克) 。
5. Take the pan higher, add sugar and become caramelized. Turn off the heat.
將鑊略為提高,以免蘋果被猛火燒焦 。加入黃糖 (17克) 把蘋果煮至焦糖化,即可熄火。
6. Add blueberry.
加入藍莓,略為煮熱。
7. Place the fillings in a small baking bowl.
將焦糖化的蘋果及藍莓放進焗杯。
8. Put crumbles on top
再將已融合好的金寶配料加於水果上。
9. Put it in the oven, 190c, 6-7 minutes, check in 5 mins
放入焗爐,以190度 烤焗約 6-7分鐘,約 5 分鐘左右檢查狀態,金寶表面金黃香脆即成。

Cooking Tip 小貼士 
Add a pinch of salt ( grandma’s tips)  before adding blueberries! 在加入藍莓前放少許鹽,可以令蘋果金寶的甜味更突出!

烤蘋果奶酥 Apple Crumble

INGREDIENTS
225g/8oz apples, peeled, cored and cut into slices
(Granny Smiths, Coxes, Pink Lady etc)
150g/50z Hazelnuts roughly chopped
40g/1 1/2 oz caster sugar
finely grated rind and juice of 1 orange
1/2 teaspoon of cinnamon
2oz/50g wholemeal flour
2oz/50g dark muscavado sugar
25g /1oz blanched almonds finely chopped
1tsp oatmeal/Porridge oats
2oz/50g butter, cut into cubes
cream/ or good quality vanilla ice cream to serve.

METHOD

  1. Turn oven on to 180C/350F/Gas 4
  2. Place caster sugar into a dry hot frying pan until it caramalises
  3. Throw in your chopped apples along with your orange rind and juice cook gently until apples are tender but still holding their shape (approx 5 mins)
  4. Remove from heat and poor into a tart tin, ready to receive the crumble layer on top

  5. Sift the plain flour into a bowl
  6. Add in the wholemeal flour ad the baking powder
  7. Stir in the muscavado sugar almonds, oatmeal and crushed hazelnuts.
  8. Rub in the butter until the mix resembles breadcrumbs
  9. Sprinkle the crumble mixture over the layer of apples in the tart tin and bake in the oven until the crumble is crisp and golden brown.
