餐桌里程:料理‧好‧空氣 – 專欄推介

因為工作關係,認識了今年舉辦「餐桌里程:料理‧好‧空氣」活動策劃機構 Go.Asia 及健康空氣行動,該活動嚮應 Jamie Oliver 年度 Food Revolution #為食起革命 而設,推廣本地食材,從以減低在食材運送的過程中產生的污染。了解過後,發現香港95%都是進口食材,平的有巴西雞、美國肥牛;貴價的有黑毛豬、和牛及各類海鮮等。

為表支持,上個月跟平台上的幾位廚師研究出一些使用本地食材的菜單,希望藉此讓 MobiChef 的客人有更多機會認識本地食材,在享用新鮮美食的同時了解可謂餐桌里程。舉例中廚葉師傅的「低碳健康菜單」,用上新界蜜豆、有機蕃茄、涼瓜等蔬菜設計了素食的菜單,環保之餘健康,一舉兩得。

喜歡西餐的又可以選擇 Leslie 的六道菜特選餐單,每道菜都有兩個選擇,一檯朋友聚餐可各自選擇自己的配搭,十分彈性。他特意選用本地溫室青瓜及水耕菜做成沙律,是我個人最喜歡的清新之選。

在研究菜單的過程,都離不開做功課,找一下本地食材購買的地方。除了到街市外,今時今日還可網購食材直送家中,例如近年出現的 www.jousun.com 就有不少本地食材供應,透過網站購買不同材料,中央處理物流運送,還可以可節省供應商不少運送里程呢!

以下是 Go.Asia 及健康空氣行動的數據,有助我們認識食物里程,盡力減輕不必要的碳排放:

本地種植、本地購買的運輸里程,約為 36 公里。以元朗農場為例,食材從農場運送到

 

農墟供市民選購:

元朗至大埔 30 公里

元朗至中環 36 公里

元朗至鰂魚涌 45 公里

外國進口食材的運輸里程:

(最遠)第一位

巴西,進口如雞、豬等冷藏及冰鮮肉類和禽肉等

18,000 公里的航程

食物里程相差足足500

第二位:

美國,如牛肉、海鮮、零食及加工水果與蔬菜等

13,000 公里的航程

食物里程相差超過360

第三位:

西班牙,如黑毛豬、西班牙肉腸、海鮮、酒類等

10,500 公里的航程

食物里程相差超過290

事實上,很多食材是香港本土未有供應的,但面對氣候變化,我們可以做的是盡量多選用本地生產的食材,或多用本地食材與鄰近地方的食物搭配,縮短食物里程。

在這個美食天堂 

– 我們每星期平均會在外吃五餐飯;

– 我們日常95%的食材分別從不同產地循海、陸、空進口

餐飲業界可帶領可持續發展,減短食物里程,改善空氣污染,締造藍天新鮮料理。

 

 餐桌里程:料理‧好‧空氣 x 為食起革命 自煮挑戰

參加方法:

請於 5月期間參加 本地食材自煮挑戰至少使用一款本地食材),分享至自己的社交媒體、再挑戰親友,帶動全城自煮氣氛,支持本地食材、減低餐桌里程,料理‧好‧空氣!

步驟

第1步 – Cooking | 入廚烹調並寫下步驟 (簡單列明食材及那一或數款為本地食材、烹調方法,如有心得可列明)

第2步 –   Shooting | 拍攝照片(完成品或連步驟照片) 或短片

第3步 –  Sharing | 分享至個人社交媒體 (如Facebook, Instagram, YouTube 等),並hashtag #FoodAir #FoodRevolution #CleanAir #料理好空氣

第4步 – Challenge your friends | tag 至少 3位朋友參與(多多益善),讓挑戰延續下去。**或可選擇以 捐款 抵消挑戰

有關食譜及分享內容將於 http://www.frd.asia 及「為食起革命」Facebook專頁,不時更新發佈。

你可以在發佈照片或短片的同時,使用以下文字:

To echo with Jamie Oliver’s Food Revolution Campaign. Go.Asia is in partnership with Clean Air Network (CAN) to launch FoodMiles: Healthy Food. Healthy Air. in pursuit of local healthy food and clean air!

In this Gourmet Paradise …

– We eat out five meals a week in average;

– 95% of our daily food source comes from different origins being imported by sea, land and air

Catering and logistic sector is a leading member in global sustainability. By selecting more local food transported by clean vehicles to shorten food miles, we then improve air quality and creating blue sky & fresh food.

Activity: Healthy Food. Healthy Air. Cooking Challenge

How you can participate

Follow these simple steps to share recipes of your food creations using locally grown ingredients and post them on your social media. We also encourage you to invite your friends to take part in our challenge and have them complete the challenge by the end of May. Let’s reduce food miles by cooking from scratch with local ingredients!

Steps to follow:

Step 1 – Cooking | Cook a dish and type your recipe (Please indicate the local ingredients used, cooking steps, and cooking tips if any)

Step 2 – Shooting | Take photos or make a short tutorial of your dish (You can provide a photo of your completed dish or photos with steps)

Step 3 – Sharing | Post the recipe & photo(s) of the dish on your social media (e.g. Facebook, Instagram & or Youtube) with the hashtags #FoodAir #FoodRevolution #CleanAir

Step 4 – Challenge your friends | Last but not least, don’t stop just there! Please invite and tag your friends to take part in this Cooking Challenge.  Your friend has a month to decide to whether to accept the challenge or forfeit by donating a minimum amount of $100 to support Clean Air Network & Go.Asia’s charity work.
