簡易美味西蘭花 Brilliant Broccoli

份量Serve:  4-6

材料 INGREDIENTS
海鹽 sea salt
現磨黑胡椒碎 freshly ground black pepper
1棵 西蘭花 1 large head of broccoli
1小節 無鹽牛油 a small of knob of unsalted butter

做法 Method
1. 把水置於大鍋中, 加入少許鹽並以大火煮沸
1. Fill a large pan with water, add a tiny pinch of salt and bring to the boil over a high heat.

2. 把西蘭花頂和莖分開,將西蘭花頂切或摘成小塊
2. Meanwhile, on a chopping board, cut the florets from the broccoli, then cut or break them into bite-sized pieces.

3. 將西蘭花莖切片
3. Trim and cut the stalk in half, then finely slice it.

4. 水沸後,慢慢地把西蘭花放入水中
4. Once boiling, use a slotted spoon to carefully lower the broccoli into the water.

5. 煮3至4分鐘或至嫩熟,刀尖應輕易插入西蘭花中
5. Cook for 3 to 4 minutes, or until tender – you should be able to poke the tip of a knife easily into the florets.

6. 用笊篱隔去水份,滴乾水份約一分鐘
6. Drain over the sink into a colander, then leave to steam dry for a minute.

7. 放回鍋中,灑上鹽和胡椒碎
7. Tip back into the pan, then sprinkle with a tiny pinch of salt and pepper.

8. 加入牛油,上碟並享用
8. Add the butter and toss to coat, then tip into a serving bowl and serve.

黑糯米粥 Black Glutinous Rice Porridge

黑糯米即是一般所謂的紫米、黑米,性味甘溫,有益氣補血、健身暖胃、滋補肝腎、清肝潤腸等作用,所含豐富的澱粉質,又以粗蛋白、粗脂肪、粗纖維、膳食纖維、維生素A、E、B1、B2、B6、C、菸鹼素、鉀、磷、鐵、鋅等,均較一般白米高出許多。

材料:黑糯米、冰糖

做法:黑糯米淘洗乾淨,用冷水浸泡3小時,取出,瀝乾水分。將黑糯米放入鍋中,加入適量冷水煮沸,然後轉小火煮約半小時至米粒軟爛。粥內加入冰糖,繼續煮2分鐘,即可盛起食用。

涼拌黑木耳

黑木耳性平、味甘,補氣益智、潤肺補腦,有止血作用,主治咯血、吐血、血痢、崩漏、痔瘡出血、便秘帶血等,對肺虛咳嗽、久病體虛,肢體麻木的有效,另外黑木耳具有阻礙血液凝固的物質,防止血栓形成,對心血管的疾病有保健的作用。

材料: 黑木耳、冰糖、辣椒粒、蒜蓉、鎮江醋

做法:
1. 將黑木耳浸水,浸至發大及軟身就可撕成細塊備用。
2. 將黑木耳放入滾水煮熟,待涼。
3. 將辣椒粒、蒜蓉、鎮江醋與黑木耳拌勻。
4. 加入少許冰糖,放入雪櫃雪1至2小時即可。
