名廚即場指導 即學即煮 即買本地新鮮農產

母親節將至 (本星期日-5 月12日),推廣健康飲食生活態度的《為食起革命》(Food Revolution) 為各忙碌的仔仔女女準備了自製母親節驚喜的好點子!

母親節當日本港兩位著名新派大廚,包括《囍宴》創辦人余健志先生 (Jacky Yu) 及畢業於法國藍帶烹飪學校一向「愛煮.惜食」的 琳琳 (陳彥琳小姐 Alvina Chan) ,將親臨 太古坊 港島東農墟 現場示範 母親節易煮菜式。學完易煮菜式,大家更可在 港島東農墟 即場買到本地新鮮有機食材,再回家做個自煮仔女,於母親節自煮大餐,孝敬母親大人。

「我認為教育下一代健康飲食習慣和健康烹飪技巧是非常重要的,因這些知識建構了他們未來健康生活的基礎。」電視飲食節目主持及 “愛煮” 創辦人 琳琳(Alvina)。

《為食起革命》香港區義務工作大使陳嘉惠指出 :「以往烹飪技巧是一代傳一代,大部份人都懂得烹調食物的。現在大家都過度依賴加工食物 (processed food),不論在富有國家還是發展中國家,快捷、便利或便宜,成為了眾多人選擇「食物」的要求。但便利的加工食物往往為了延長貨架壽命 (shelf-life) 及增添味道,而添加大量防腐劑、化學物及大量糖份、鹽份及脂肪。我們大部份人都知道高糖、高鈉、高脂的飲食對健康大為不利,而製造必須壓制成本及大量生產的廉價加工食物,生產者會用上很多不人道的方法去對待動物 (如工廠式密集飼養、餵食抗生素等) 及對待大自然 (如大量使用殺蟲劑及基因改造工程等)。這是錯誤的做法及有如「先洗未來錢」的自私行為,這一代都在自覺與不自覺地掠奪下一代的資源及破壞大自然的原有法則。因此我們必須進行一場和平與理性的革命,利用飲食教育傳播正確的選擇食物之道,令飲食習慣回歸自然 – 非加工、低鹽、不添加糖、本地、可持續發展、有機及人道。」

這是我第二年支持Jamie Oliver基金會的《為食起革命》運動。《為食起革命》在全球選出了多位義工代表去承諾推廣健康飲食及「真食物」(非加工食物),我很榮幸成為其中一份子。
2013年我希望把食物教育帶到社區及學校,繼續推廣本地及城市農耕的可持續性發展及發起一些珍惜食物、減少浪費的行動,當中包括支援食物銀行及減費活動,務求令香港甚至亞洲區的《為食起革命》更強大。

有關《為食起革命》
《為食起革命》是全球參與的飲食改革運動。活動主要是聯繫世界各地喜歡食物的有心人,讓大家去分享資訊、才能及資源,並傳遞各人的知識及去強調世界上各項重要的飲食議題。全球攜手便能喚起改變。《為食起革命》是關於聯繫你的社群,包括學校、餐廳及商業組織。《為食起革命》希望激起大家改變不良的飲食習慣及宣揚每個人都應該獲得更好的飲食教育。

有關Jamie Oliver與《為食起革命》
Jamie Oliver是《為食起革命》的發起人及發動全球過百萬人士參加《為食起革命》的靈魂人物。約在2010年,Jamie Oliver於ABC 電視台推出了一個新節目,名為 “為食起革命”(Food Revolution),Jamie Oliver以電視節目形式去改善學校膳食並在美國西維吉尼亞州的Huntington組織起社區廚房,以行動去教育當地人從基本步驟開始去烹調。縱然最初面對很多困難,但最後反應仍是很熱烈,之後更在洛杉磯展開第二季的節目,並在當地追蹤學校膳食及當地人的飲食習慣。後來Jamie Oliver 成立了非營利的Jamie Oliver飲食基金會,並於美國各地繼續激勵當地人為真食物站起來! 時至今日,為食起革命已演變成一個全球運動,通過全球的義工網絡散播至全球各地的社區,以推廣飲食教育及從基本入手烹調新鮮食物,以對抗愈益嚴重的癡肥問題及飲食相關的各類疾病。

COOK for MOM on Mother’s Day
Everyone can cook like a celebrity chef

The Food Revolution will be giving out ideas for everyone to surprise their beloved mother on this special Mother’s Day (this Sunday, 12 May)!

Two local celebrity chefs Mr. Jacky Yu and Miss Alvina Chan will be showing us how to cook a creative and delicious meal on Mother’s Day to surprise our moms. Lots of fresh local organic ingredients are available for purchase at the same venue, where you can just learn, buy and cook.

The above activity is just part of a series of Food Revolution Hong Kong’s activities in May. The Food Revolution was started by world-renowned chef and food educator Mr. Jamie Oliver. The initiative has organized over 1,000 food concerned activities in 62 countries across the globe, and Hong Kong is part of it.

“There is a big difference between our generation and our mother’s or even grandma’s generation. At their time, everyone (or at least most of the people) can cook and cooking skill was passed from generation to generation. Nowadays, many people have never cooked from scratch and they highly rely on processed food. It doesn’t matter if they are from rich countries or from developing ones, most people choose the fast, convenient, cheap processed “food” for their main diet. This kind of unhealthy diet will gradually harm our health. Therefore, we need a peaceful and rational revolution, by spreading food knowledge and helping people to make the right food choice. Our diet should go back to normal and follow the nature. 名廚後人教孩子健康飲食為食起革命

「食得是福,孩子要肥嘟嘟才可愛。」相信是不少父母的「養仔格言」,但現代父母為了方便或討孩子歡心,經常讓孩子吃大量零食和垃圾食物(Junk Food)。世衞指,全球有近四千三百萬名五歲以下的兒童超重,主要原因是小朋友以加工食物為主要糧食,容易超重和營養不良。本港名廚後人、自小熱愛煮食的陳嘉惠(Beatrice),去年跟英國型男廚師Jamie Oliver的基金合作,在港發起「為食起革命」(Food Revelution),鼓勵大家識食之餘亦要珍惜食物。記者 卓穗良

這場「革命」源於英國廚師Jamie Oliver,他一向提倡「原味飲食」(Naked Dining),七年前號召二十七萬人聯署,令英國政府撥款協助改善學校餐飲,讓學生遠離垃圾食物。Jamie闖入英美校園,以新鮮蔬果和健康煮食方法,取代傳統高脂高熱量的漢堡包薯條,成功為當地兒童「減磅」,老師發覺學生氣喘次數明顯降低,學習過程更專心。

「肥仔肥妹」再不是歐美兒童標誌,過去三十年來,全球癡肥人數增加一倍,現時全球四千多萬名超重兒童中,發展中國家超重兒童佔逾三千萬人。Beatrice去年與Jamie Oliver基金合作,在香港搞「革命」。她發現新一代對飲食存在不少謬誤,「年輕人習慣快餐文化,家長和小朋友習慣在超市買零食,又以為日本入口的就一定安全,但好多零食都有基因改造成份,要睇清楚食物標籤和來源地。而且,本港『三高』問題好嚴重,同飲食好有關係。」

走入校園教自煮

Beatrice是本港已故名廚陳東師傅後人,自小對「食」充滿熱情。她決定搞「革命」,稍後走入校園教育兒童食物的知識。「我們會嘗試同三四歲小朋友一齊煮食,等他們知道蘋果有皮,蝦有殼。小學生就可以學習簡單耕種,明白食物得來不易,要好好珍惜。」 「革命」亦會變得更「土炮」,「大家都覺得Jamie煮食好西化唔適合香港,所以我們特別挑選適合港人口味的食譜翻譯,希望教大家煮好味又健康的醬汁。今年口號是『我惜食』,鼓勵大家識食之餘亦要珍惜食物。五月是革命月,與不同團體合作舉辦烹飪教室、期間限定特色料理、講座及工作坊。」

為響應《為食起革命》,世界級名廚 Chef Stanley Wong 於上星期六,即5月19日,假黃竹坑 The Studio by Culinart  「開班授徒」,以本地有機新鮮食材免費傳授烹飪秘技予約30多名參加者。

當天食材均來自 歐羅有機農場 及 and Bon Vivant Organics。Chef Stanley 除了向大家示範了一道 意大利扁豆螺絲粉沙拉 外,還邀請了Romain Comte of La Truffière Angliss Hong Kong Food Service 向參加者介紹有機葡萄酒會和有關天然養殖牛肉的資訊。

Hong Kong’s own celebrity chef, Chef Stanley Wong, hosted a cooking class last Saturday, 19 May, at the The Studio by Culinart , to show support for the Food Revolution Day!

Chef Stanley Wong (who’s cooked at Jean-George Vongerichten’s Spice Market in New York, Mandarin Oriental Hong Kong) demonstrated how to easily put together salads and pastas in less then five minutes while using organic vegetables from Au Law Organic Farm and Bon Vivant Organics alongside organic pastas. After a short cooking demo, participants were given a chance to learn about biodynamic wines from Romain Comte of La Truffière and happy beef that run free at the Cedar River farm distributed by Angliss Hong Kong Food Service.
