ViuTV Chef Ricky’s Steamed Egg with Sea Urchin《出得廳堂》張錦祥師傅:海膽蒸蛋

材料 Ingredients:
魚柳 Fish Fillet  150 克 gram
雞蛋 Egg 3 隻
雞湯 Chicken Soup 400克 gram
海膽 Sea Urchin 400克 gram

做法 Method:
1. 魚柳切粒,下鹽調味,汆水,瀝乾水份,備用 Fish Fillet cut into small dice, marinate with salt, blanch then drained
2. 雞蛋打成蛋漿。雞湯煮滾,離火,慢慢加入蛋漿內拌勻。Whip up the eggs. Boiled the chicken soup, remove from heat then stir in the egg.
3. 蒸盤內先放入已汆水的魚柳粒,再注入雞湯蛋水,隔水慢火蒸至僅熟。
最後將海膽蓋在蒸蛋面。Place the fish dice into a steam plate then pour in the chicken soup and egg mixture. steamed until cooked.
