「素味謀麪有奶油」Creamy Spanoccoli Angel Hair

印象中多年前曾經嘗過一道Spinorrocoli Pizza, 印象不錯。一直記著那味道和口感。某日在想弄甚麼時便想:用類似材料來弄意大利粉,單憑記憶加點想像加點「附碌」(幸運),大概是可行的。

I was impressed by a Spinorrocoli Pizza which I tried few years ago . I can still remember the taste and texture. Therefore I tried to use similar ingredients to make this pasta, and it works!

材料 Ingredients

西蘭花 Broccoli
菠菜 Spinach
磨菇 Mushroom
牛油 Butter
蒜蓉 Garlic
洋蔥 Onion
忌廉 Heavy cream
白酒 White wine
麪粉(或粟/豆粉)½ 茶匙 ½ teaspoon of Flour (or corn or bean flour)
巴馬臣芝士 Parmigiano-Reggiano cheese
意大利粉 Pasta
芫荽 Parsley
羅馬諾芝士 Romano cheese

做法 Method

  1. 先把西蘭花及菠菜洗淨並切粒乾水。喜歡的話可以加點磨菇增加野味及口感,同樣洗淨切粒。我本人偏好Baby Portabello。

Wash and cut the broccoli and spinach into small cubes. You may add some mushroom such as baby portabello to enhance the flavour and texture. Wash and cut the mushrooms.

  1. 牛油慢火下鍋,之後蒜蓉及洋蔥粒輕炒香,再放一半磨菇炒輕炒。

Gently heat the butter with low heat. Pan fry the garlic and onion cubes. Then add half of the mushrooms to pan fry slightly.

  1. 轉大火,將西蘭花及菠菜擠乾水下鍋炒至半熟

Change to large heat, then add broccoli and spinach to pan fry after drying up.

  1. 把菜撈起,原鍋連汁留著,放鮮忌廉(heavy cream)。回慢火。

Put the vegetables on a plate and leave the juice on the pan. Add some heavy cream to the same pan and change to low heat.

  1. 滾後,放餘下的磨菇,加白酒。份量視乎個人喜歡醬汁的厚薄程度加半茶匙麪粉(或粟/豆粉)。看個人需要加鹽及胡椒粉

After boiling, add the rest of the mushroom and white wine. Add around half teaspoon of flour (or corn or bean starch) to the sauce according to personal preference of the thickness of the sauce. Season with salt and pepper if needed.

  1. 放菜回鍋慢火煮大概5分鐘,最少每30秒攪拌一下。關火前灑一把Parmigiano-Reggiano cheese。關蓋關火。

Put the vegetables back to the pan and use low heat to cook for around 5 minutes. Stir once at least per 30 seconds. Just before turning off the heat, sprinkle some Parmigiano-Reggiano cheese. Then cover the pan with a lid and turn off the heat.

  1. 煮好意大利粉(pasta)。醬汁厚的會選較粗或闊的如Fettuccine, 醬汁薄的會選較幼細如Angel Hair。熟後乾水。

Cook some pasta and dry it after cooked. It depends on the thickness of sauce to choose the pasta. For thicker sauce, it is better to choose thick pasta like Fettuccine. For thinner sauce, you may choose thinner pasta like Angel Hair.

  1. 意粉上碟,淋醬上面,攪拌一下。灑一把Parsley,喜歡的還可以再加一點Romano cheese。禮成。

Put the pasta on a plate with sauce on top. Gently stir it and then sprinkle some parsley and romano cheese on top. Serve well.
