日本江戶時代的傳統壽司 It’s a traditional dish from Japan Edo period.

材料 Ingredients 

2人份,共12個 Serves 2 pax, 12pcs in total

(A) 壽司飯 For Sushi Rice
日本珍珠米 1合米

(約煮出兩碗)

2 bowls of cooked Japanese rice
蘋果醋 2 湯匙 2 tablespoon of apple vinegar
糖 1 湯匙 1 tablespoon of sugar
鹽 1 茶匙  1 tea spoon of salt
(B) 免治肉碎 For Minced Meat
雞肉 40 克 40g chicken
豬肉 40 克 40g pork
醃料:鹽、糖、麻油及胡椒粉各適量 Marinade: salt, sugar, sesame oil, pepper
調味:味噌 適量 Seasoning: miso
(C) 配料   For Matching Ingredients
甘筍(幼、細) 幾片(1 條) Few thin slice of carrots
青瓜(幼、細) 幾片(1條) Few thin slice of cucumber
櫻桃番茄 1粒 1 pc cherry tomato
牛油果 4片 (1個) 4 slice of ripe avocado
熟蝦 2隻 2 cooked shrimps
煙三文魚 2片 2 slice of salmon
吞拿魚 2湯匙 2 tablespoon of tuna
紫菜絲 適量 (1包) Slice of seaweed
檸檬 4 小角 (1個,薄皮) 4 small thin piece of lemon

用具 Utensils

保鮮紙 Cling film
Knife
砧板 Chopping board
刨絲/片器或一般刨皮用具 Grater
平底鑊 (炒肉、煮甘荀) Pan
碗及碟 Bowl and plate
湯匙 Tablespoon
茶匙 Teaspoon
碟 (放完成品) Plate
清潔的濕毛巾或廚紙 (蓋著壽司飯) Clean wet towel or kitchen paper (for covering sushi rice)

做法 (人份) Methods (for serving 2)

  1. 食材(A) : 日本珍珠米 1合米加水約1.2合,約煮出兩碗飯。飯熟後用筷子攪鬆,再焗10分鐘。在仍溫熱時,加入蘋果醋 2湯匙、糖1湯匙及鹽 1茶匙伴勻。飯最好用清潔的濕毛巾蓋上。

For Ingredient (A): Mix 1 cup of rice with 1.2 cup of water to cook about 2 bowls of rice. When cooked, use a chopstick to stir to make the rice less packed. And let it warmed by the latent heat for 10 minutes. When still warm, add 2 tablespoon of apple vinegar, 1 tablespoon of sugar and 1 teaspoon of salt and mix well. Use a clean wet towel to cover the rice.

  1. 食材(B):豬肉、雞肉共80克攪碎,加入醃料。炒肉碎時可加入味噌作調味。

For ingredient (B): Marinate a total of 80g minced pork and chicken. Can use miso to season when pan-fry the minced meat.

  1. 食材(C) For ingredient (C):

a. 熟蝦或活蝦。先用長竹籤把活蝦固定,可預防蝦在煮的時候捲起,放入熱水中煮熟。

Use either cooked or raw shrimp. For raw shrimp, use a long stick to fix the position of shrimp when put into hot water to cook. It prevents the shrimp from curling when cooked.

b. 罐頭吞拿魚碎,隔水並用叉把魚肉鬆開。

For canned tuna, drain the water and use a fork to stir to make the tuna flake less packed.

c. 甘筍要選幼及細的,約2-3 cm 闊。加入熱水略煮,隔乾水份,備用。甘筍分開兩半,一半橫切薄圓片,另一半刨長薄片。

Choose small and thin carrots which is about 2-3cm thick. Boil in hot water then drained. Cut the carrot into half. One half for cross sectioning into small round slices and the other half for grating long strips.

d. 青瓜分開兩半,一半橫切薄圓片,另一半刨長薄片。

Cut the cucumber into half. One half for cross sectioning into thin round slice and another half for grating long thin strips.

e. 櫻桃番茄切薄片

Slice the cherry tomatoes.

f. 成熟的牛油果,切開去核,去皮,再切成薄片

Cut the ripe avocado and remove the seed and skin. Then slice it.

g. 檸檬切成薄片,再切成小角。

Slice the lemon. Then cut into small pieces.

h. 煙三文魚、紫菜絲打開包裝。

Remove the packages of salmon and seaweeds.

  1. 先把飯分為 12 份,約2 湯匙飯製成1個手鞠壽司。基本製作是先把一半的飯放上保鮮紙上,加入肉碎,再舖上餘下的另一半飯,用手紐、壓成球型便成。

Divide the rice into 12 portions. around 1-2 tablespoon can make 1 sushi. To make a sushi, place the ingredients first then place half portion of rice onto a cling film, then add minced meat, followed by another half of the rice. Use hand to squeeze and roll it into a ball shape.

參考配搭 Reference combinations

  • 先放2-3片甘筍圓片(視乎圓片的大小),再按基本製作完成。

Place 2-3 carrots round slice depending on the size of the slice.

  • 先放熟蝦半隻及牛油果一片,再按基本製作完成。

Place half of the shrimp with 1 slice of avocado.

  • 先放青瓜長片及甘筍長片,再按基本製作完成。

Place long strips of cucumber and carrots.

  • 先放紫菜絲3-4條或打成十字,再按基本製作完成。

Use 3-4 seaweed or to make a cross by using seaweed.

  • 先放吞拿魚碎 1 茶匙,再按基本製作完成。解開保鮮紙後,可加上櫻桃番茄薄片或小角。

Place 1 teaspoon of tuna. After rolling into a ball and remove the cling film, add slice of cherry tomato.

  • 先放煙三文魚,再按基本製作完成。解開保鮮紙後,可加上檸檬小角。

Place the piece of salmon. After rolling into a ball and remove the cling film, add a small piece of lemon.
