紅菜頭意粉 Beetroot pasta

材料 Ingredients

紅菜頭 2個 (切皮後切成小粒) 2 Beetroots, cut into small pieces, trimmed
紅蔥頭 ¼ 個 (切成小粒) 1/4 Red onion, cut into small slices
乾蕃茄 1堆 (切碎) 1 bunch Sundried tomatoes, chopped
小蘿蔔 2個 (切成小粒) 2 Small radishes, cut into small pieces
橄欖油 1湯匙 1 tablespoon Olive oil
Salt
胡椒粉 Pepper
里考塔芝士 ½ 杯 1/2 cup Fresh ricotta
烤核桃 ½ 杯 (切碎) 1/2 cup Toasted walnuts, chopped
辣椒碎 Red pepper flakes
小麥意粉 Farro spaghetti

做法 Method

  1. 將紅菜頭, 核桃, 蘿蔔和蕃茄放入食物處理器, 並加入調味料, 水, 橄欖油和辣椒碎。

Pulse beetroots, walnuts, radish, tomatoes in a food processor with season, water, olive oil and pepper flakes.

  1. 根據包裝指示用鹽水煮意粉

Cook pasta in salted water according to package directions.

  1. 炒香紅蔥頭和紅菜頭, 然後加入意粉炒勻。上碟時加入芝士, 並灑上橄欖油和辣椒碎。

Pan fried red onion with beet mixture, mixing with pasta. Serve with ricotta, a drizzle of olive oil and red pepper flakes on top!
