免揉香蔥包 No-Knead Onion Bread

NoKnead Bread

 

材料
【基本麵團】
150克 高筋麵粉 (約1杯) *另備少許作手粉之用
1/2茶匙 速發酵母
1茶匙 盬
1茶匙 糖
1茶匙 橄欖油
100-110克 微溫水

【麵包配料】
適量 青蔥,切碎
半個 洋蔥,切絲

做法
1. 預備一較大的容器,把麵粉、酵母、鹽、糖、油、水及青蔥等加入,全部拌勻,變成一濕潤麵團
2. 室溫放2小時(第1次發酵)後,用抹刀再翻幾下麵團 (排氣)
3. 排氣後直接放進雪櫃,存放半日至1天備用
4. 要製作麵包時先提前從雪櫃拿出麵團,靜置1-2小時恢復常溫
5. 等待麵團恢復常溫之際,以少許油及鹽炒洋蔥絲,約5-7分鐘至焦糖顏色,稍為放涼備用
6. 拿出麵團,灑上手粉,按壓麵團呈扁平狀,加入洋蔥絲,搓成自己想要的形狀,放入模具中,作最後發酵1小時
7. 預熱焗爐,以220°C烤焗20分鐘,出爐後架起麵包,放涼即可享用

Ingredients
150g bread flour ( appro. 1 cup) *and some for dusting your hands
1/2 tsp instant yeast
1 tsp salt
1 tsp sugar
1 tsp olive oil
100-110g warm water
Spring onions, julienned
½ onion, shredded

Preparation Methods
1. In a large mixing bowl, mix flour, yeast, salt, sugar, oil, water and spring onions. Mix well until they form a moist dough.
2. Leave the dough to rise in room temperature for 2 hours. Use a knife to turn the dough for a couple of times to let the air out.
3. Pop it in the fridge and let it sit for 0.5-1 day
4. Before working the dough, take it out of the fridge 1-2 hours beforehand so as to let it return to room temperature.
5. While waiting, fry the shredded onions with a bit of oil and salt, cook for 5-7 minutes until they are caramelised. Remove from heat and let it cool down.
6. Take the dough out and dust your hands with flour. Press the dough until it is flat and top with shredded onions. Cut and mould the dough into the shape you want. Place them on an oven tray and let them rise for another hour.
7. In a pre-heated oven, bake the dough for at 220°C for 20 minutes. Cool the loaf on a rack. Enjoy!
