Baked mushrooms stuffed with ricotta (Funghi al forno ripieni di ricotta)

75克鬆軟域哥打芝士1個檸檬的皮

1新鮮紅辣椒,去籽,仔細切碎,調味用

海鹽

新鮮研磨黑胡椒

2湯匙新鮮牛至及墨角蘭葉,仔細切醉

1小把巴馬臣芝士,刨絲,預留分量外芝士作頂部修飾

4把蘑菇,擦抹乾水淨

特級初榨橄欖油

1把火箭菜或軟身的多葉香草

75 g good crumbly ricotta cheesezest of 1 lemon

1 fresh red chilli, deseeded and finely chopped, to taste

sea salt

freshly ground black pepper

2 tablespoons fresh oregano or marjoram leaves, finely chopped

1 small handful Parmesan cheese, freshly grated, plus extra for sprinkling

4 handfuls mushrooms, brushed clean

extra virgin olive oil

1 handful rocket or soft leafy herbs

  1. 焗爐預熱至220度。

Preheat your oven to 220ºC/425ºF/gas 7.

  1. 把域哥打芝士、檸檬皮、辣椒、少許鹽和胡椒放進碗內,用木匙攪拌,再加入切好的牛至和巴馬臣芝士拌勻。

Put your ricotta into a bowl with the lemon zest, chilli and a little salt and pepper. Beat together with a wooden spoon, then fold in your chopped oregano and the Parmesan.

  1. 蘑菇去蒂不要(亦可以把蒂保存作意大利粉的醬料),然後把蘑菇傘與少許油、鹽、胡椒拌勻,蘑菇倒轉放入烤盤內,令它們可以釀入少許域哥打芝士。

Carefully remove the stalks from your mushrooms and discard them (or keep them for making a pasta sauce), then toss the mushroom caps in a little oil, salt and pepper. Lay them upside down on a baking tray so that they can be filled with small amounts of your fantastic ricotta mixture.

  1. 餡料小心地釀入,撒上少許巴馬臣芝士,焗約15分鐘直到食物呈現金黃色。成品請用一個大碟盛上,撒上裝飾的火箭菜或軟身的多葉香草享用。

Carefully spoon in the filling, sprinkle a little Parmesan over the top and bake in the preheated oven till golden – about 15 minutes. Great served on a big plate, sprinkled with some dressed rocket leaves or soft leafy herbs.

Mushroom is a very healthy ingredients. Each 100g of mushrooms contains 24kcal calories and 2.1g fibers. The rich content of non-soluble fiber of mushroom can give satiety, moderate increase of blood glucose, which is beneficial to diabetes patients. On the other hand, researches have revealed that polysaccharides from mushrooms can lower total cholesterol and is good for cardiovascular health. B vitamins of mushrooms are rich as well, which is important in energy transfer of our body. It helps us stay energetic.
