Sweet _ spicy beer can chicken

1隻1.8公斤走地雞

橄欖油

1罐330毫升啤酒

2湯匙燒烤醬

1個新鮮紅辣椒,去籽

1束葱,修剪

半束新鮮芫荽

 

醃料部分

1大湯匙煙燻紅椒粉

1大湯茶匙辣椒粉

1大湯匙小茴香籽

1大湯匙芫荽籽

1茶匙孜然籽

1-2個乾燥紅辣椒

1大茶匙海鹽

1大湯匙新鮮研磨黑胡椒

 

1大湯匙黑糖粉

1 x 1.8 kg whole free-range chicken

olive oil

1 x 330 ml can of beer

2 tablespoons barbecue sauce

1 fresh red chilli, deseeded

1 bunch of spring onions, trimmed

½ a bunch of fresh coriander

 

For the rub:

1 heaped tablespoon smoked paprika

1 heaped teaspoon cayenne pepper

1 heaped tablespoon fennel seeds

1 heaped tablespoon coriander seeds

1 teaspoon cumin seeds

1-2 dried red chillies

1 heaped teaspoon sea salt

1 heaped tablespoon freshly ground black pepper

1 heaped tablespoon soft dark brown sugar

做法 METHOD (6人分)

焗爐預熱至200度。

Preheat the oven to 200ºC/400ºF/gas 6.

  1. 雞從雪櫃拿出,回復至室溫。

Remove the chicken from the fridge and leave aside to come up to room temperature.

  1. 醃料用杵和研缽研磨至粉末狀,雞淋上橄欖油後用手抹上醃料,令雞仔細入味。

Bash the rub ingredients to a fine powder in a large pestle and mortar, then drizzle the chicken with olive oil. Sprinkle over the rub and use your hands to massage all those lovely flavours into all the nooks and crannies.

  1. 打開啤酒,倒剩3分1的啤酒(其餘的3分2自用),把雞孔向下,啤酒罐垂直塞入雞內,雞隻坐直。

Crack open the beer and pour out around two-thirds of it (or drink it!), then carefully lower the chicken cavity onto the can so it looks like it’s sitting up.

  1. 雞隻垂直放上烤架後放入焗爐焗約1小時10分鐘,直到金黃色和熟透。要檢查雞隻是否熟透,可以用刀插入雞最厚的部分,例如大腿,會流出清徹的汁液。

Position the chicken so it’s upright on a roasting tray, then place in the oven and cook for around 1 hour 10 minutes, or until golden and cooked through. To check it’s done, insert a knife into the thickest part of the thigh – the juices should run clear.

  1. 雞整隻塗上燒烤醬,放回焗爐焗10分鐘,直到顏色變深,表面變得黏稠。

Brush the chicken all over with the barbecue sauce, then return to the oven for a further 10 minutes, or until dark and sticky.

  1. 接著,辣椒和葱切碎,摘出芫荽葉。

Meanwhile, finely slice the chilli and spring onions and pick the coriander leaves.

  1. 預備好後,小心地拿掉啤酒罐,雞隻切件後撒上辣椒、葱和芫荽葉即可上菜。

Once ready, carefully remove and discard the can, then carve up the bird, scatter over the chilli, spring onions and coriander leaves, then serve.

啤酒廣受歡迎,很多時是男人的浪漫。但要注意的是,啤酒的營養價值低,主要含有「空泛熱量」的酒精。一般啤酒的酒精含量為5%,糖分3%,其餘營養素很少,一罐330毫升的啤酒已提供超過130大卡的熱量,超過半碗白飯。另外,啤酒的嘌呤較高,有痛風人士不宜飲用。要注意的是,很多人啤酒會配搭火鍋享用,但如果火鍋的材料主要是海鮮和肉類等嘌呤高的食物,配搭啤酒更會令嘌呤攝取過高,形成尿酸,令痛風惡化。因此,啤酒宜酌量飲用,避免肥胖和痛風。

Beer, an ever popular drink, is even sometimes called ‘the romance of men’. However, the nutrition value of beer is low, it can only supply pure calories. Common beer contains alcohol about 5%, carbohydrate 3%, a can of 330ml beer contains over 130Kcal, which is higher than half bowl of rice. Moreover, beer contains relatively high purine, metabolic arthritis patients should avoid beer consumption. It should be aware that most of us will drink beer while having hot pot. If the main ingredients of the hot pot are sea food and meat, which have high purine, drinking beer will even worsen the situation. Purine may turns into uric acid, worsening metabolic arthritis. Therefore, to avoid obesity and metabolic arthritis, beer should be drunk in a carefully controlled amount.
