Greek vegetable kebabsIngredients:

  • 120g halloumi cheese
  • 1 yellow pepper
  • 1 courgette
  • 140g cherry tomatoes
  • 1/2 a bunch of fresh mint

Optional:

  • 1/2 a fresh red chili
  • 1 lemon
  • Olive oil
  • Freshly ground black pepper

材料:

Method 做法

  1. Put 6 wooden skewers into a tray of cold water to soak – this will stop them from burning. 把六個木串浸在凍水內,以防它們在燒烤時着火。
  2. On a chopping board, cut the halloumi into 2cm cubes, then add to a large mixing bowl.把切哈羅米芝士切成2厘米的小方塊,然後放進大攪拌碗內。
  3.  Carefully cut the pepper in half from top to bottom, then trim away the stalk, seeds and any white pith (you can use teaspoon to do this), then slice into 2cm pieces and add to the bowl.小心地將黃椒從上而下切開一半,再切掉莖,種子以及白髓 (你亦可以用茶匙弄走它們),然後將它們切成兩件,再加進碗內。
  4.  Cut the courgette in half lengthways, then cut into half-moon slices, roughly ½cm thick, then add to the bowl along with the tomatoes. 把西葫籚切開兩等份,然後切成半月形,大約1/2 厘米厚度,再聯同車厘茄一同加入碗內。
  5.  Pick the mint leaves onto a board and finely chop them, discarding the stalks. 切碎若干塊薄何葉,並除去不要的莖。
  6.  Carefully deseed and finely chop the chilli, if using. 若想加入紅辣椒,則把它們去核及切碎。
  7.  Use a microplane to finely grate the lemon zest onto a board, then add to the bowl along with the mint leaves, chilli (if using), and 2 tablespoons of olive oil. 用刨刀小心地刨出檸檬皮,然後再連同薄荷葉、辣椒(如用)以及湯匙橄欖油加入碗內。
  8. Season with a pinch of pepper, then mix well to coat. 加入適量胡椒作調味再攪勻。
  9. Preheat the grill to high.將烤爐預熱為「高」。
  10.  Lightly grease a baking tray with oil, then put aside.在烤板上加入適量的油。
  11.  Thread and divide the halloumi cubes, cherry tomatoes, pepper and courgette pieces between the skewers. 用木串把哈羅米乾酪粒,車厘茄,辣椒和西葫蘆片依次串起。
  12.  Place onto the greased tray and cook under the grill for 10 to 12 minutes, or until the cheese is golden and the veg are soft, turning halfway through.把串燒放在已搽油的烤板上烤焗十至十二分鐘,或直至蔬菜變軟以及芝士烤成金黃色時,再把串燒反轉。
  13. Serve with a fresh green salad and some flatbreads or pittas.上枱時配以新鮮沙律以及扁麵包或比得包。
