Smoky mixed-potato wedges


  • 2 large sweet potatoes
  • 2 medium potatoes
  • sea salt
  • freshly ground black pepper
  • 1 teaspoon sweet smoked paprika
  • olive oil


  • 2顆大番薯
  • 2顆中馬鈴薯

  • 現磨黑胡椒
  • 1茶匙甜煙熏辣椒粉
  • 橄欖油

Method 做法
1. Preheat the oven to 200ºC/400ºF/gas 6. 將焗爐預熱至200攝氏度/400華氏度/6檔。

2. Wash the potatoes under cold running water, scrubbing well with a scrubber to get rid of any dirt (there’s no need to peel them). 將馬鈴薯放到流動的冷水下沖洗,並用百洁布洗去表面的污跡(無需削皮)。

3. On a chopping board, cut each potato in half lengthways, then cut each half in half lengthways, and then each piece in half again so you end up with 8 wedges, then add to a large mixing bowl. 將馬鈴薯放在砧板, 對切一半後再對切兩次,最後你總共會有八塊薯角。然後,將這八塊薯角放入一個大的攪拌碗中。

4. Sprinkle over a tiny pinch of salt and pepper, and the paprika. 往碗裡撒上少許的海鹽、黑胡椒以及甜煙熏辣椒粉。

5. Drizzle over 2 tablespoons olive oil, then toss everything together to coat. 均勻地淋上兩茶匙的橄欖油後,輕微拋擲攪拌碗以致所有的薯角都沾上調味料。

6. Spread out into a single layer over 2 large baking trays, then bake in the hot oven for 35 to 40 minutes, or until golden and cooked through. 將薯角平鋪於兩個大的烘盤上,然後放入焗爐焗35至40分鐘,或直到薯角呈現金黃色及熟透。

7. Use oven gloves to remove the trays from the oven, then leave to sit for a couple of minutes (this will make it easier to remove them from the tray), then use a fish slice to transfer them to a serving dish. 用手套取出烘盤,先等它冷卻一段時間(這樣會比較容易取下烤好的薯角),然後用煎魚鍋鏟將它們取起放到盤子中。
