材料 INGREDIENTS
1個中型 洋蔥 1 medium onion
2根 西芹 2 sticks of celery
1束 大葱 1 medium leek
2瓣 大蒜 2 cloves of garlic
橄欖油 Olive oil
3個中 薯仔 3 medium potatoes
2個 西式翠玉瓜 2 courgettes
1個 有機蔬菜湯濃縮粒或1.4升新鮮蔬菜湯 1 organic vegetable stock cube or 1.4 litres hot fresh vegetable stock
海鹽及新鮮現磨黑椒 Sea salt and freshly ground black pepper
100克 青豆或蠶豆 100g podded fresh peas or broad beans
200克 沙律用的菠菜 200g baby spinach
數小枝 新鮮薄荷 A few sprigs of fresh mint

做法 Method
1. 洋蔥去皮,在砧板上切好,放在大碗裡。
Peel and roughly chop the onion on a chopping board, then place in a large bowl.

2. 西芹及大葱修剪及粗略切好(確保清洗乾淨),加到洋蔥裡。
Trim and roughly chop the celery and leek (make sure you wash it really well) and add to the onion.

3. 大蒜去皮切細粒,加到大碗內的蔬菜裡。
Peel and finely chop the garlic cloves and add to the bowl of chopped vegetables.

4. 大鍋以中火燒熱,加2湯匙橄欖油。
Place a large pot on a medium heat and add 2 tablespoons of olive oil.

5. 當大鍋變熱時,加入大碗內的蔬菜,轉用小火,用蓋半掩煮10至15分鐘,不時攪動。
Once hot, add all the chopped vegetables, turn the heat down to low and cook with the lid askew for 10 to 15 minutes, or until tender, stirring occasionally.

6.薯仔用Y形刨刀去皮,切成約2厘米大小的小塊,放於一個空碗。
Peel the potatoes using a Y-shaped peeler, then chop into rough 2cm chunks and place in the empty bowl.

7.西式翠玉瓜切成約2厘米大小的小塊,加到薯仔裡。
Chop the courgettes into rough 2cm chunks and place in the bowl with the potatoes.

8. 把水壺注滿及燒水
Fill and boil the kettle.

9.當蔬菜熟透後加入薯仔及西式翠玉瓜,下少許鹽及黑椒。
Once the vegetables are cooked, add the potatoes, courgettes and a tiny pinch of salt and pepper.

10. 蔬菜湯濃縮粒弄碎(如用)到量杯,小心地加入1.4升沸騰的水,攪拌直至濃縮粒溶解。
Crumble the stock cube (if using) into a measuring jug and carefully top up to 1.4 litres with boiling water and stir until dissolved.

11. 把湯加入大鍋。
Carefully pour the hot stock into the pot.

12. 轉大火及燒滾湯,然後轉中小火,煮15至20分鐘或直至薯仔熟透。
Turn the heat up to high and bring to the boil, then reduce the heat to medium-low and cook for 15 to 20 minutes or until the potato is cooked through.

13. 加入青豆或蠶豆及菠菜,煮4分鐘或直至豆變軟。
Add the peas or beans and the spinach and cook for a further 4 minutes, or until the peas are tender.

14.把大鍋移直防熱的平面,放在一邊1至2分鐘讓湯不再冒泡。
Carefully remove the pot to a heatproof surface and leave for a minute or two to stop bubbling.

15.以手用的攪拌機攪拌湯(用毛巾以保護雙手)
Carefully blitz with a stick blender until smooth (use a tea towel to protect your hands from little splashes).

16. 試味以決定是否需要鹽或黑椒。
Have a taste and add a tiny pinch of salt and pepper if you think it needs it.

17. 摘下薄荷葉,莖部扔掉。
Pick and roughly chop the mint leaves, discarding the stalks.

18.把湯盛在碗裡,加入薄荷葉,配合自製脆麵包丁會更好吃。
Carefully ladle the soup into bowls and sprinkle over the mint – it’s delicious served with homemade croutons.

貼士
如想更美味,把自製脆麵包丁、大塊的麵包或意大利拖鞋麵包放在焗盤。加少許橄欖油,焗10至15分鐘,或直至麵包轉金黃色及變脆。
To make tasty, homemade croutons, place chunky pieces of bread or ciabatta onto a baking tray. Drizzle with a little olive oil and bake in the oven at full whack for 10 to 15 minutes, or until golden and crisp.
