食品不安全!?其實,你我都是共犯 (2) Food Insecurity!? We are the accomplice indeed (2)

來看看《紐約時報》美食評論作家Mark Bittman怎麼說,這是他在2007年所作的TED演講,在談論我們現在的飲食方式所存在的問題 (太多肉類、太少蔬菜;太多快餐,太少在家中煮食),並解釋這種飲食方式如何危及整個地球。

Below is a TED talk sharing by Mark Bittman. Mark Bittman is a food columnist from New York Times. In this video he talked about the problem of the eating habit of human beings (included eating too much meat and fast food; consuming not enough vegetables and rarely cook at home). He also explained why this diet habit is endangering the whole planet.

Mark Bittman首先點出「肉食主義」的問題,這包括垃圾食物,他認為:

一、我們不需要它們任何一個來維持健康,我們不需要動物產品,我們當然更加不需要白麵包或可樂。

二、這兩者都被過份且廣泛的推銷,這形成不自然的需求,而非我們天生渴望得到。

三、它們的生產其實是由政府機構所支持,因此讓我們犧牲了食用更健康和更天然食物的選擇。

Mark Bittman pointed out the problem of overconsumption of animals and junk food:

1: we don’t need either of them for health. We don’t need animal products, and we certainly don’t need white bread or Coke.

2: both have been marketed heavily, creating unnatural demand. We’re not born craving Whoppers or Skittles.

3: their production has been supported by government agencies at the expense of a more health- and Earth-friendly diet.

但之所以會大量流行,全在於食物的生產已變成工業化,以及業者的推波助瀾。Mark Bittman舉出幾個例子:很多人得了脂肪恐懼症,他們被說服吃酸乳酪 (優格) ,被洗腦酸乳酪差不多與蔬菜一樣有益,也許確實如此,但在實際情況下,他們販售酸乳酪的方法,是將它轉化成類似冰淇淋一樣的東西在賣,結果,對人體根本沒有益處; 同樣地,能量棒 (granola bar) 已被形塑為一種健康食品,但實際上,如果你看看它們的成分表,它們類似士力架巧克力(Snickers),其實多於燕麥片…

This kind of diet became popular because food production had become industrial and the food industry is pushing hard to make you believe in what they want you to believe in. For example, Many people became fat-phobic. The way the industry sold yogurt was to convert it to something much more akin to ice cream. Similarly, let’s look at a granola bar. You think that that might be healthy food, but in fact, if you look at the ingredient list, it’s closer in form to a Snickers than it is to oatmeal.

因此,Mark Bittman認為,我們對這些東西的需求,根本不是我們所需要的,而是我們的慾望驅使我們,造成我們吃進去比我們最佳攝取量更多的卡路里,而在食物中的卡路里導致了疾病的產生。

Mark Bittman believed “our demand for meat, dairy and refined carbohydrates — the world consumes one billion cans or bottles of Coke a day — our demand for these things, not our need, our want, drives us to consume way more calories than are good for us. And those calories are in foods that cause, not prevent, disease.”
