勝出菜式:《杭州魚丸金桔番茄濃湯》

《杭州魚丸金桔番茄濃湯》 Kumquat and Tomato Thick Soup with Fish ball

材料 Ingredients

本地有機鯇魚 半斤            300 grams, Local Organic Grass Carp

有機金桔 3粒                        3 Organic Kumquat

本地有機番茄 4個                4 Local Organic Tomato

本地有機薑 2片                    2 pieces, Local Organic Ginger

水 600毫升                           600ml, Water

海鹽 1茶匙                            1 teaspoon, Sea Salt

蕃茜 少許                               Some Parsley

油 1.5湯匙                             1.5 tablespoon, Oil

做法 Method

1.用刀逐少刮出魚肉,加水250毫升,鹽半茶匙打至起膠,即出魚丸放泠水內

1.Prepare the Fish Ball. Use a knife to scrape the fish meat out from the whole fish. (keep the fish head and bone for making the soup base) Add 250 ml water, half teaspoon of salt. Beat it until thick. Squeeze the mixture in ball shape to complete the fish ball then put them in ice water.

2.將魚丸連水放煲內用慢火滾熟

2.Boil the fish ball with hot water

3.在易潔鑊內燒熱油放入薑片,把起出魚肉後的魚頭魚骨煎香,加水350毫升,滾至湯變白色,隔渣留用

3.Heat the pan then put ginger in it. Pan fried the fish head and bone. Add 350ml water. Boil them till the water turn to white color. Remove the fish head and bone and keep the soup base for use.

4.將蕃茄放滾水內去皮切件,加魚湯少許鹽調味煲滾

4.Boil the tomato with hot water. Remove the skin and cut it into pieces. Add the fish soup base, some salt and boil them together

5.將4.加入金桔放攪拌機內打成蓉

5.Add 4 and Kumquat into a mixer and stir it until it turns to a thick paste

6.將蕃咖濃湯倒出上碗,放上魚丸,灑上蕃茜,完成

6.Pour the thick soup into a bowl. Add the fish ball and some parsley.
