碎素肉蠔仔養生泡飯 Rice Soup with Mini Oysters

材料 INGREDIENTS
碎素肉    浸發好3両(120克) / 乾(約40克) Textured vegetable protein (TVP) Soaked 120g / Dry 40g
糙米紅米飯  2碗 2 bowls (500g) Red rice (cooked)
水  4碗(約1公升) 1 L Water
鮮蠔仔  3両(約120克) 120g Fresh mini oysters
生粉 1茶匙 1 tsp Corn starch
芫茜碎  少許(約5克) 5g Fresh cilantro (chopped)
中國唐芹菜(切粒)40克 40g Chinese celery (small dice)
絲瓜(粒) 40克 40g Sponge gourd (small dice)
調味 Condiments
鹽  1茶匙 1 tsp Salt
麻油   1茶匙 1 tsp Sesame Oil
胡椒粉  少許 a pinch White pepper

做法   METHOD

1.    碎素肉預先浸發好及壓乾水備用。
Pre-soak TVP and press to drain.

2.    蠔仔用生粉拌勻,再用水洗淨備用。
Mix oysters with starch, rinse with water, drain.

3.    於鑊中燒滾水,加入糙紅米飯及碎素肉煮熟,再放入蠔仔、絲瓜煮1分鐘及調味。
Bring water to a boil in pot, add cooked rice and TVP, bring to boil again, add mini oysters, sponge gourd cook for 1 minute, add condiments.

4.    最後加入芫茜及唐芹菜,可食用。
Add cilantro and celery before serving
